Our Team
Erik is our main cheese maker. He has interned with several area cheese makers and learned the details of making our cheese during his internship in the Pyrenees Mountains of France. Erik dreams of returning to this region of France to participate in the Transhumance. Transhumance is the annual walking of the herd into the high meadows of the Pyrenees pastures for summer grazing and cheese making. Erik is also keenly interested in learning more of the traditional methods of Affinage or cheese curing from the old time shepherds who trained him.

With a family tradition of shepherding and cheese making that goes back hundreds of years, Cecile left her native France in search of the big city excitement. After meeting Erik in New York she realized that she was a country girl in her heart and set out to re-connect with her heritage and her life long love of animals. With her passionate and concerned care, our herd of Icelandic Sheep and Cashmere Goats are thriving. Cecile is also a talented fiber artist whose interest lie in the exploration of natural colors and textures applied to hand spun, knit and woven children's clothing.
