Our Philosophy
At Escot Valley Farm we believe in keeping things simple as nature intended. We follow organic and humane principles in how we raise our animals and harvest from them. We operate on a completely grass based rotational system that is designed to allow our multiple species to each contribute to the improvement of our pasture and its underlying soil health. When grains are needed (e.g. chickens & hogs) only locally grown certified organic grains are used.
It is very important to us that we continually re-invest in our soils and not run a mining operation that leaves either our earth or our community depleted. It is because of this that we follow the natural cycles of all our animals and only milk/harvest seasonally. The net result is more nutritious products for you and a better life experience for our farm “employees” who live healthy stress free lives. It also gives everyone time to regenerate between harvests.
Lastly we fundamentally believe that the traditional methods of fabrication developed over hundreds of years produce the highest quality and best flavored products. We also believe that like the famed mountain valleys of France where we studied cheese making, our region has its own soul or “terroir”. Our goal then is to blend these old world techniques with modern knowledge of food safety to explore and define the unique flavor and texture profile offered our local terroir. When you bite into or touch or smell an Escot Valley Farm product we want you to feel the inseparable and unique connection to the beautiful Mid-Hudson valley lands from which it came.
