Note - Due to the unexpected closure of the cheese making facility we rented last year we will not be producing cheese in the 2010-2011 season. We are saving money to build a complete cheese plant on our farm and hope to return to cheese production in 2012.

Escot Valley Farm is a small family-run farm nestled in the Rondout Valley. Our primary mission is to bring the exquisitely rich and nutty flavors of Pyrenees style aged sheep’s milk cheese to the Hudson Valley region. We use the same family recipe and traditional artisan methods that we learned while interning on relative’s farms in the Bearn region of France.
